The Sweet Potato Praline Cupcake was the first dessert I created for my vegan bakery. I wanted to create something great for diabetics. Sweet potatoes were the obvious choice. Our delicious sweet potato cupcake is topped with Cinnamon Cream Cheese frosting and maple pecans.
